Baked Vadapav | Niti Mehta | Vatsala Cooking School

✨ Ingredients :

750 gms boiled potato
1 big onion
4 green chillies
14 cloves garlic
1 inch ginger
Few curry leaves
2 tsp mustard seeds
2 tsp urad dal
1 tsp cumin seeds
2 tsp turmeric powder
2 tsp hing
2 tsp dry mango powder
1 tbsp salt
2 tbsp oil

✨ Method :

Heat oil in a deep pan.

Coarsely blend onion, garlic, ginger and chilles.

Add mustard, urad dal, cumin.

Let it splutter!

Add curry leaves, hing, turmeric, onion, garlic ginger, chilli to it.

...Cook for a while...

Add salt as per taste

Amchur powder

Add boiled potatoes

Mix well and turn off the flame and let it cool.

Make lemon size balls

Flatten it and put a medium size ball of vada stuffing in the middle. If one has dry vada pav chutney one can sprinkle on the vada stuffing.

Seal it from all sides and place it on a greased baking tray. Let it double in size. It will take atleast one hour

Bake in OTG for 1 hr at 200 degree
Let it brown on both sides.

Put the tray in OTG.

Also put a tray filled with hot water beneath the buns tray so the buns do not turn dry.
Let it double in size.

It will take atleast one hour.
