COASTAL Karnataka Spicy PATHRODE

Ingredients:

10- 12 Colocasia leaves
3 cups dosa rice
1.25 cups grated coconut
2 tbsp urad dal
1 tsp methi seeds
3 tbsp coriander seeds
1.5 tbsp jeera
1/ 2 tsp hing
5-6 Byadgi red chillies
small lemon sized tamarind
3 tbsp jaggery
Salt

Method:

Soak the rice for 4-5 hrs. 

Fry urad dal and methi separately till light brown. 

Grind the coconut, fried urad dal, methi, coriander, jeera, red chillies, tamarind, jaggery and soaked rice to a coarsely smooth batter. 

Wash the leaves thoroughly. Remove the protruding stem from the base of the leaf. 

Meanwhile keep a big vessel with water. Place the stand. Then keep a plate with holes. Close the vessel with a lid. I have used a traditional vessel. Allow the water to boil.

Keep a big tray or a thali. Place the largest leaf on the tray upside down. Apply the ground masala evenly. Place another leaf in the same way. Apply the masala again. Repeat this process till 4-5 leaves. Fold the sides of the leaves and then the bottom of the leaves. (Same way as spring rolls.) Roll it tightly. Place the tightly rolled Colacasia leaves with masala in the vessel with boiling water. Repeat the same process for other leaves. Close the lid. Let it boil for 30 min. Check it by inserting a fork or a knife. 

Cut this into half . The steamed Colacasia roll (PATHRODE) can be eaten with fresh home made butter or with oil.

Fried PATHRODE
Cut the PATHRODE rolls into round slices and keep it in a hot tava. Shallow fry  on both sides with oil. 

Crispy PATHRODE rolls ready.

कलमी वड़ा एक राजस्थानी स्नैक है। जो की चने की दाल से बनाया जाता है और बस घर के रोज इस्तमाल होने वाले मसाले के साथ इसे बनाया जाता है। ये खाने बहुत ही स्वादिस्ट लगता है और कुकुरा होता है। जो की शाम की चाय के साथ खाने में बहुत ही अच्छा लगता है। घर में अगर मेहमान आए तो स्नैक उनके लिए भी बनाया जा सकता है। 

Ingredients

1 कप भीगी चना दाल
3-4 अदरक के टुकड़े
 2-3 हरि मिर्च

मसाले

Recipe for Lemon 🍋 Cake 😍😍

Recipe for cream cheese frosting:- 

Cream Cheese:- 1cup 
Vanilla extract:- 1 tsp 
Fine sugar:- 1 cup 

Beat them well and keep it the refrigerator for half an hour! 

Per-heat oven for 10/15mins for 160* 

Recipe to add dry ingredients:- 

All purpose flour:- 1+1/2 cup 
Baking powder:- 1tsp 
Baking soda:- 1/2tsp 
Lemon 🍋 zest:- 1tsp 

Whisk them well and keep it aside! 

Prepare your wet ingredients:- 

Fine sugar:- 1 + 1/2 cup 
Vegetable oil:- 3/4 cup 
Vanilla extract:- 1/2 tsp
Curd:- 1cup 

Mix well and then add dry ingredients! Whisk slowly and do not over mix! 

Put the batter in 6” or 8” pan! 
Bake for 20-25mins! Time might vary as per the different brands of oven! 

Keep MANIFESTING for it to be the most tasty and whoever eats must feel so happy 😍

Let it cool down and beauty your cake with cream cheese frosting, Choco chips and blueberries 🫐 

Keep it in the refrigerator for few hours and tan tannnanaa YOUR LEMON CAKE is ready to serve 😋

How To Make Carrot Pickle Recipe?

1) Wash the carrots, green chilies, and ginger well. Pat dry completely. Peel the carrots and ginger. Now chop the carrots into 1 ½ inch long and medium thick sticks. Do not make too thin otherwise, it may get wilted, soft and soggy once pickle is ready. We want soft yet there should be some crunch.

2) To prepare green chilies, first, slit chili into half and then cut into 1 ½ inch long pieces. Make ginger sticks of the same length but keep them thinner than carrots since ginger has a strong flavor.

3) Bring the water to a rolling boil in a saucepan on high heat. Once starts boiling, add carrots and cook for exactly 2 minutes. Drain the water immediately.

4) Spread the carrot sticks on the clean kitchen towel and let it dry out completely. Means there should be no moisture on them to increase the shelf life. If you have access to the sun then you can keep in the direct sunlight for 1 hour. Or let them dry at room temperature on the kitchen counter for 1 day or overnight. If in a rush, pat dry with a paper towel.


5) Now in a bowl, take rai kuria, red chili powder, salt, and sugar.

6) Mix everything well.

7) Add tamarind pulp.

8) Also, add oil.

9) Mix the pickle masala really well.

10) Add dried carrots, chilies and ginger.

11) Mix well.

12) Cover the bowl with plastic wrap and let it mature for 1 day in the refrigerator. Do stir once or twice. You will notice the green chilies will become darker in color. Also, the oil will starts to float on top.

The carrot pickle will taste better and better after a few days of maturing. Store in airtight, clean, dry glass jar or container.
