- Kanda Attu is vegetarian/vegan omelette,no doubt about it. There are so many traditional recipes which are not preparing these busy days. This recipe is also one among them. Almost traditional recipes are on the verge of extinction.
🛍️ Ingredients :
1. Kanda/Yam/Suran-2 cups chopped as above (fresh/frozen)
2. Chana dal
3. Red chillies
4. Zeera
5. Salt Oil

🍲 Method (for your reference) :
1. Soak chana dal in water for 30 mins.
2. Meanwhile, grind kanda/yam in a mixer coarsely like grated coconut texture.
3. Important: Transfer this into a fine mesh sieve and wash thoroughly with water. This eliminates the itching nature of the yam. Lightly squeeze the water and keep it aside.
4. Now, grind soaked chana dal, red chillies, zeera and salt coarsely like grated coconut texture, 5. Mix both the yam and chana dal mixture well.
6. Make the mixture into equal portions of big handful ball size.
7. Take one portion and spread evenly on hot pan
8. Drizzle some oil and let it cook on med-hi flame for about a min, covering with lid.
9. Now, flip it to the other side and let it cook and roast.
When its crispy, take it and serve immediately with ghee and white rice.
